I can’t believe this is the first time I’m posting a recipe with bacon. Bacon is a love affair to last a life time. Even when I was vegan, bacon was the exception. Because come on, its BACON!

These burgers were out of this world good. Bacon. Guacamole. Grass fed beef. It took some extreme willpower to snap photos of this before devouring every last bite. The meal was inspired by Ben Hulet‘s #sundaynightguacburgers. If you want to see some drool worthy meals, hop on over and check it out. Make sure you have the ingredients on hand though. Bacon Guacamole Burgers

Looking at this meal, I question why I ever thought vegetarian and vegan were right for me. I was caught up in the myth that cholesterol equaled heart disease, cancer, aging skin and premature death. Then, thanks to a multitude of personal health problems, I decided to do some research.

Liz Wolfe spells is out in Eat the Yolks, “Cholesterol is a lifesaving, health-promoting substance and it performs incredibly important functions in our body. Every one of our cells needs it at every stage of our lives.”

Cholesterol:
-is a building block for cell structure and hormones
-is used to make bile and vitamin D
-assists in producing serotonin
-is a powerful antioxidant
-is a key player in brain synapse formation, which provide us with the ability to learn and remember
-has been shown that higher levels actually increase lifespan

No wonder I’m fraught with health problems. I was limiting a vital nutrient for years. I’ve learned that cholesterol levels do not determine good or bad health. Our bodies even produce the stuff but at levels too low for most so we must get adequate amounts from food. And since cholesterol is found only in animal products, burgers are back on the menu!  If you want more information on this, Liz Wolfe does an excellent job of laying all the facts on the table in her book.

Bacon Guacamole Burgers

Guacamole:
4 avocados – chopped
2 cloves garlic – minced
1 red onion – chopped
1/2 a jalapeño
3 tbsp cilantro
juice of 1 lime
salt

Burger:
1 lb grass-fed beef
2 tbsp minced onion
salt
pepper

►In a large mixing bowl, add the garlic, onion, jalapeño, lime and salt. Mix well. Allow to sit for a few minutes to marinate. Then mix in the avocado and stir in the cilantro.

►Using your hands, loosely blend the beef and onion in a large bowl. Form into patty size of choice and set aside. Be careful to only slightly flatten out the patty.
►Heat a large shallow skillet over medium high heat. Sprinkle each patty with salt and pepper on both sides. You will only touch the burger once throughout its entire cook time. Place one in the center of the pan and do not touch for two minutes. Flip the burger and allow to cook for two minutes more. Touch the center to test its doneness. It should be fairly firm, not too much give.

►Serve the burger on a bed of lettuce, topped with guacamole and bacon.
