There’s a new nut in town! I’m excited to welcome Tigernuts to the table.

And it’s soy, dairy, grain, nut and seed free. AND the facility that processes them is dedicated gluten-free, peanut-free and tree nut-free to prevent any possible cross-contamination.

I am personally sensitive to many nuts and seeds and I know thousands of others share this issue. That’s why I’m especially excited to have tigernuts fill a void in my diet. 


WHAT ARE TIGERNUTS?
I discovered tigernuts earlier this year at PaleoFx. Tigernuts are a small root vegetable also called tubers that are found at the root of cyprus grass. Originating from Northern Africa and the Mediterranean, tigernuts are not related to nuts at all, despite their misleading name. And no, they have nothing to do with tigers either.

HOW DO YOU EAT TIGERNUTS?
Most commonly eaten in Spain and Northern Africa, tigernuts are enjoyed as a snack, can be blended into “milk” or horchata, and also ground into a flour to use in gluten-free baking.

To be honest, it was not love at first bite. The texture is chewy and they have a sweet vanilla after-taste. Not what I expected in a nut substitute. When I think nuts, I think salty. It is similar to a hazelnut but without the crunch.

Now the Horchata, that’s a different story. At PaleoFx I bought two bottles on the spot, enjoying one with lunch and another with dinner that day. So good. Horchata originates in Spain and is enjoyed there year-round. I’m happy it has finally made it’s way to my Whole Foods shelves.

The tigernuts themselves are much better when soaked in water from 12-24 hours before eating. When soaked they reconstitute and regain their starchy consistency, making them less chewy and dry. Soak them one for one, or one cup of water per every cup of tigernuts. 

I like to make a granola with them by combining the soaked tigernuts, coconut chips, apple chips and raisins. They really shine when making treats and baking though. Tigernuts easily substitute for almonds or walnuts. Throw them in the food processor with dates, raw cocoa powder and salt, then roll them into balls and you have a yummy on-the-go treat. This method is what led to the creation of my tart recipe.


TIGERNUT NUTRITION 
These little tubers are quite nutritious. Tigernuts contain the highest amount of a special kind of fiber called resistant starch. The starch is a beneficial prebiotic that feeds the good bacteria in your gut, leading to healthier digestion.

Unlike many other starchy foods like potatoes, tigernuts contain nourishing fats. The fatty acid profile is similar to that in olive oil, with a high percentage of monounsaturated fats.

BERRY-LEMON TART WITH TIGERNUT CRUST 
I experimented with a few different tigernut recipes before having success with this Berry-Lemon Tart. Since nuts and seeds are a sensitivity for me, I was excited to use tigernuts in a no-bake crust. They worked beautifully! Right texture, right flavor. Perfection.

Ingredients
  1. TIGERNUT CRUST
  2. 2 cups TigerNut pulp - tightly packed (1 cup soaked in 1 cup water for 24 hours, blended with 3 cups warm water)
  3. 6 pitted medjool dates - chopped
  4. ½ cup unsweetened coconut flakes
  5. 1 tsp vanilla extract
  6. ½ tsp salt
  7. FILLING
  8. 7 egg yolks
  9. ½ cup granulated maple sugar
  10. ⅓ cup lemon juice (juice of 2 lemons)
  11. 1 tbsp lemon zest
  12. ½ cup thick coconut cream - from canned fullfat coconut milk
  13. 2 tbsp arrowroot flour
  14. Fruit for topping
Instructions
  1. CRUST
  2. Start by soaking 1 cup of TigerNuts in 1 cup of water for 24 hours. Then blend the TigerNuts and water in a high-powdered blender, adding 3 more cups of warm water. Blend until fully processed.
  3. Separate the “milk” from the pulp by straining out the pulp with cheesecloth. Place a piece of cheese cloth over a wide-mouth mason jar or bowl and secure it in place with a rubber band. —
  4. Pour all contents from the blender into the jar. The cheesecloth will catch all the pulp, which you will place into a large bowl. As you remove the pulp, squeeze it over the jar to remove the excess liquid.
  5. Store the “milk” in the fridge and consume over the next two days. TigerNut Milk sours quickly.
  6. Now you are ready to make the crust with the pulp.
  7. Measure out 2 tightly-packed cups of pulp and place into a large food processor. Add in dates, coconut, vanilla and salt. Process for 3 minutes until it begins to clump. Scrape down the sides periodically to ensure everything is fully incorporated.
  8. Grease a 9” spring-form pan with 1 tsp of coconut oil.
  9. Press the crust into the bottom of the pan and set aside.
  10. FILLING
  11. For the filling, create a double boiler. Fill a medium-sized sauce pan with 2” of water and bring to a simmer.
  12. While the water comes to a simmer, whisk together the egg yolks and sugar in a large metal bowl. Then add lemon juice and zest.
  13. Place bowl on saucepan so that it is sitting on top of it. Stir the mixture continuously. Be aware that the eggs can begin to clump if you stop stirring and the consistency will not be right.
  14. After 2 minutes of stirring, add in the coconut cream.
  15. Then very gradually stir in the arrowroot flour, dusting it over the mixture to incorporate.
  16. Continue stirring until the filling thickens and fully coats the back of a spoon.
  17. Remove from heat and allow to cool in metal bowl for 10 minutes.
  18. Once cooled, pour over the TigerNut crust.
  19. Refrigerate for 4-6 hours before decorating with your favorite berries. Raspberries, blueberries and strawberries pair perfectly with the lemon filling.
Notes
  1. Time does not account for 24 hours needed to soak tigernuts OR time for chilling in the fridge.
  2. Use the milk exactly as you would any nut milk. It's delicious in coffee and tea!

Top 6 Dairy-Free Ice Cream Shops in NYC

Ice cream, ice cream, we all scream for ice cream! Summer’s favorite treat is taking on new directions. The route is leading to dairy-free and allergy-friendly options. And all the dairy-free people in the world rejoiced!  After years of torture, watching others enjoy these mouth-watering treats, the marketplace is finally catering to everyone’s needs.

Last week I ventured on a grand ice cream tour with some lovely ladies around the city. Our mission was to single out the most sustainable ice cream offerings in the city. My personal mission was to locate the most sustainable and most allergy-friendly ice cream shops.

We hit the deliciousness jackpot over and over and over again. To the point of a slight sugar hangover the next day. But hey, it had to be done and I regret nothing.

So here is my list of NYC Dairy-free and Allergy-friendly Ice Cream Shops.

Ample Hills
Dairy and 1-2 Dairy-free options

Small batch produced ice cream, all made in the their Brooklyn shop, Ample Hills offers traditional dairy ice cream with one or two dairy-free versions per day. The Coconut Fudge Sorbet is my go-to at this shop.

Go in slowly though! There is a enough sugar to give you a buzz after a few bites. Eat this stuff in moderation.

Five locations across the city, with spots in Prospect Heights, Gowanus, Brooklyn Bridge Park, Riis Park in Queens and Upper West Side. My vote is for the Gowanus location, equipped with a rooftop deck.

 

Blue Marble
Dairy and 1-2 Dairy-free options

This is a cute little shop with primarily dairy-filled flavors. When I arrived there was one dairy-free offering, a coconut milk based ice cream with toasted coconut flakes. Not too sweet and the coconut flakes offered a good texture contrast.

There are two storefronts, Cobble Hill and Prospect Heights. They sell at seasonal markets around the city and pints are sold at many retailers throughout the city too.

Blythe Ann’s
ALL Dairy-free + nut-free, soy-free and gluten-free options

One location in the East Village.

Formerly known as LuLa’s Sweet Apothecary, this East Village shop is on my top NYC dairy-free experiences list. A friend recommended it before I moved to the city five years ago and at the time I had NEVER experienced real dairy-free ice cream. I say never because I don’t count sorbet as real ice cream. That’s just frozen sugar water.

Step into Blythe Ann’s and you step back in time to a 1920s scene. The entrance is dark and the interior is moody with soft shadows bouncing off the glass bowls and silver spoons.

Twelve hand-packed flavors are offered everyday including a Cake Batter soft serve. I had the Strawberry and my friends tried the Peanut Butter Banana and Chocolate Fudge. All topped with Coconut Whipped Cream and a brandy-soaked cherry. Flavors to try next time are Mint Chip, Pistachio and Brownie Batter. They also have sundaes, root beer floats and many fun toppings.

It makes dairy-free people feel like real people again with real desserts. Thank you, Blythe Ann’s.

DF Mavens
ALL Dairy-free + nut-free, soy-free and gluten-free options
One location in the East Village and pints sold at many retailers throughout the city.

A modern ice cream shop setting with a case of 20+ dairy-free flavors, and all are based with almond milk, coconut milk, soy milk or nut butters.

I had the Praline Pecan, which was my favorite flavor of the tour and will definitely be going back for it again.

AND the highlight: all gluten-free ice cream cones! In flavors Chocolate Hazelnut, Toasted Coconut, Cinnamon Brown Sugar and French Vanilla. That’s a big winner. It’s close to impossible to find dairy-free and gluten-free cones together.

I honestly have not tried this one, but my friends tell me it’s a winner. The Coconut Kaffir Lime soft serve is the one to try. Some other fun flavors are Raspberry Pink Peppercorn, Cinnamon Blackberry and Horchata.

And bonus points: With every serving of ice cream they donate $0.05 to the Food Bank for New York City.

Dairy and 4-5 Dairy-free options
Five NYC locations and two LA shops with an ice cream truck in each city.

Made famous by their popular ice cream truck, Van Leeuwen is expanding rapidly and rightly so. Their dairy-free flavors are dead-ringers for the traditional stuff. Salted Caramel, Sicilian Pistachio, Peanut Butter Chocolate Chip and Mint Chip are some of the standards offered.

All dairy-free options are all made with coconut milk and cashews, so those with tree-nut allergies be aware. No nut-free ice creams are available.

Peaches will soon hit their peak and there is only one drink to make with them. Bellinis!

Traditionally made with champagne and peach nectar, I recreated it with fresh peaches, sparkling water and yummy tart cherry juice.

Ingredients
  1. 2 cups fresh peaches - peeled and pit removed
  2. 1 tsp ginger - grated
  3. 1 tsp fresh lemon juice
  4. 1/2 cup sparkling water
  5. Ice - about 8 cubes
  6. 2 tbsp tart cherry juice - pour into bottom of glass
Instructions
  1. In a blender combine peaches, ginger, lemon juice and ice. Blend until fully combined and the consistency of a frozen daiquiri.
  2. Pour 1 tbsp cherry juice and ¼ cup sparkling water into a glass. Then pour the peach mixture on top. Add another splash of sparkling water and serve.
Notes
  1. Note: If your peaches aren’t sweet enough, you can also add a bit of honey to the blended mix.
