Roasted Tomatoes with Balsamic Reduction

Always take advantage of tomato season. Summer rule number one. In Tennessee we call them home-grown tomatoes. Although I never understood that term. We didn’t grow tomatoes. They were purchased from road-side stands or the grocery store. But even the advertising signs said home-grown so I accepted it as a type of tomato.

Home-grown has come to mean seasonal and locally grown. The nutrient-rich soil transfers all it’s goodness to the tomatoes, producing a complexity of flavors.

I found golden beauties at the farmers market. With one bite they literally burst in your mouth. To complement their flavor, I reduced down some good quality balsamic and drizzled it just so. But then I wanted to dip everything into the balsamic.

Balsamic vinegar sweetened with a bit of honey and reduced down to a syrupy consistency.

Ingredients
  1. 4 cups Cherry or Sun Gold tomatoes
  2. 1 tbsp coconut oil
  3. 1 tsp salt
  4. BALSAMIC VINEGAR REDUCTION
  5. 2 cups balsamic vinegar
  6. 1 tbsp honey
Instructions
  1. Make the balsamic reduction first.
  2. In a medium sauce pan, stir together the vinegar and honey. Bring to boil for one minute. Reduce to simmer and cook until balsamic has reduced to 1 cup, about 20 minutes. Stir periodically to ensure honey is fully incorporated.
  3. The reduction will cook down to half and will coat the back of a spoon when done.
  4. For the tomatoes, toss with coconut oil and salt on a baking pan. Bake at 400 F for 15 minutes.
  5. Serve tomatoes drizzled with balsamic reduction.

Mango Avocado Salad with Fresh Ginger Dressing

Mango and avocado are like peanut butter and jelly, meant to be together. Their flavors compliment each other so well. I also view mango as the goddess of all fruit. Every other fruit is in awe of it’s seductive power.

Little food carts around the city offer mango slices and mango on a stick. You’d think they were selling donuts by the way crowds line up for it. It is irresistibly, refreshingly satisfying. Give me mango over ice cream any day. Keep in mind though, mango is high in sugar content so I like to categorize it as actual dessert.

This salad is inspired by a fabulous Japanese restaurant in my neighborhood. The mango and avocado are perfectly sliced and presented so beautifully. And the dressing is out of the world good. If you love ginger, this dressing will be a new favorite.

Ingredients
  1. 6 cups Bibb lettuce - washed and dried
  2. 1 mango - peeled and sliced
  3. 1 avocado - sliced
  4. FRESH GINGER DRESSING
  5. 3 tbsp fresh ginger - finely chopped
  6. 1 tbsp water
  7. 1 tsp lime juice
  8. 1 tsp coconut aminos
  9. 1 tsp rice wine vinegar
  10. 1 tbsp avocado oil
  11. dash garlic powder
Instructions
  1. Wash and dry lettuce. Tear into pieces or leave as whole leaves.
  2. Slice mango and avocado. Arrange over lettuce.
  3. For the dressing, combine all ingredients in a large wide-mouth coffee mug. Make sure the mug is large enough for an immersion blender to fit into. Then puree with an immersion blender until smooth and frothy.
  4. Pour dressing over salad and serve.

Mango Avocado Salad

Honey Lime Hot Wings

Skip the flour, skip the deep fryer. Go straight to the oven with these tasty hot wings. You may actually use toaster oven to cook this delicious hot wings! you will surely love this!

It’s a misnomer that chicken wings are unhealthy. Traditionally they are dredged in flour and dunked into a deep fryer to make the crispiest chicken. That’s just not required. Baking at a high temperature achieves the same effect.

A trifecta of honey, lime and garlic infuses these wings as they bake. The chicken stays tender and you could even skip the sauce entirely.

Marinate the chicken overnight for the lime and garlic flavors to really come through. Just make sure to marinade for at least 30 minutes. Chicken needs a little help to keep it tender.

I use a combination of Frank’s Red Hot and Cholula Chili Garlic Hot Sauce to achieve a powerful garlic kick. We’re big garlic fans in my house (and may over use it).  Any hot sauce can be used. Just make sure it is gluten free. Take a look at this list for confirmation.

Ingredients
  1. 3 lbs pasture-raised chicken wings
Marinade
  1. 2 tbsp honey
  2. ¼ cup lime juice
  3. 1 ½ tbsp garlic
  4. 1 tbsp salt
  5. ½ tbsp pepper
  6. 3 tbsp Frank’s Red Hot sauce
  7. 3 tbsp Cholula Chili Garlic sauce
For the Sauce
  1. 1/4 cup Frank’s Red Hot sauce
  2. 1/4 cup Cholula Chili Garlic sauce
  3. 1/3 cup grass-fed butter or ghee
Instructions
  1. In a large bowl, mix together all marinade ingredients. Toss and coat the wings. Cover and refrigerate for at least 30 minutes.
  2. Preheat oven to 400 degrees.
  3. Line a baking sheet with aluminum foil or parchment paper. Place a metal rack on top (a cooling rack for baking works well).
  4. Arrange the wings on the metal rack and bake for 40 minutes, flipping after the first 20 minutes.
  5. Remove from oven. Turn on Broil.
  6. Once fully heated, broil hot wings for five minutes until crispy.
  7. Prepare the sauce by melting the butter and hot sauce together, either on the stove or in the microwave.
  8. Toss cooked wings in sauce and serve.
  9. Enjoy!
Notes
  1. For a dairy-free version, melt a 1/3 cup of lard or coconut oil with 1/2 cup hot sauce.
